The Bellini is popular aperitif from Venice dating to the 1930s, and consisting of prosecco mixed with peach juice. It originated at Harry's Bar near San Marco Square, a favorite hangout of Ernest Hemingway, Sinclair Lewis and Orson Welles. Ingredients:
Mix peach juice and wine, stir and serve in a a chilled champagne flute.
